Vegan Tofu Loaf

1 pound firm to extra-firm tofu, mashed
1/2 cup wheat germ, or 2 tbsp ground flax seeds
1/2 chopped onion
2 tbsp soy sauce
2 tbsp nutritional yeast flakes (optional)
1 1/2 tsp Dijon mustard
1 clove minced garlic
1/4 tsp ground black pepper

1) Pre-heat oven to 350 degrees fahrenheit.
2) Mix everything in large bowl.
3) Press mixture into greased loaf pan and bake for 1 hour.

Serves 4
144 calories and 14 grams of protein per serving.
